I’m Ballet Beautiful NYC Master Trainer, Kara. With the holidays coming up, we’ve been busy in the #BBKitchen! Thanksgiving is almost here, and though our gatherings may be smaller this year we can still take time to prepare and enjoy delicious food with love and gratitude. Here are three of my favorite healthy and colorful dishes to add to your Thanksgiving menu.
Roasted Autumn Vegetables
This colorful medley of vegetables is definitely worth a spot on your Thanksgiving plate! I used beets, brussels sprouts, small potatoes, butternut squash, and cauliflower.
Preheat oven to 400 degrees. In large bowl combine beets and potatoes, toss with oil and salt and some garlic powder, place on a baking sheet and put in the oven for about 15 minutes. While that is baking, toss the rest of the vegetables with oil, salt, and garlic powder as well. Chop fresh sage. After 15 minutes combine the cauliflower, brussels sprouts and squash with beets and potatoes and sage. Place all back in the oven for another 15-20 minutes, until the vegetables are tender.
Wild Rice Pilaf
This simple rice pilaf made with nutty wild rice, sweet and tangy cranberries and scallions is a lovely and festive side dish.
Cook wild rice according to package instructions. Once the rice has cooled slightly add cranberries, chopped scallions and pine nuts. Dress with a drizzle of olive oil and a squeeze of lemon and salt. Stir and enjoy!
Baked Pears
These pears have the most amazing flavor, especially for being so simple. It is the perfect healthy dessert!
Preheat oven to 350 degrees. Cut pears in half and scoop out any seeds. #BBKitchen tip: cutting a slice off the back of the pears will help them to stay upright!
Place pears into a baking dish. Sprinkle with cinnamon and drizzle with pure maple syrup. Top with chopped pecans. Bake for about 30-40 minutes until pears are soft. Serve immediately plain, or add a scoop of vanilla ice cream on top. I used So Delicious dairy-free cashew vanilla!
